When Ryan partnered with Las Olas, the goal wasn't just to create cocktails - it was to showcase how spiced rum can challenge everything you think you know about the category. His signature serves reveal the dual personality that makes Las Olas so distinctive.

 

The Creative Challenge

Ryan saw something immediately compelling in Las Olas that changed his perspective on spiced rum entirely. "You've got both sides," he explains. "You get the golden richness of the rum, all that spice and wonderful rich aged notes. But you've also got this beautiful brightness to it - some of that cherry, that floral note."
This dual character became the foundation for his approach: cocktails that could explore both the rum's deeper, spicier side and its more elegant, floral qualities. Rather than masking the rum's complexity, each recipe was designed to amplify different aspects of Las Olas' unique profile.

The Signature Serves

The collaboration resulted in three distinct cocktails that showcase Las Olas' versatility across different occasions and contexts. The New Wave Punch contrasts the rum's spicy chocolate notes with bright, floral tropical flavours - perfect for entertaining. The Las Olas Sour pulls out those floral characteristics alongside golden herbal notes and bright zestiness for a sophisticated serve.The Olas Espresso Martini explores the fruitier side of the classic, using filter coffee to bring brightness while balancing those golden, richer flavours - proving that Las Olas works beautifully in premium cocktail culture.

What excited Ryan most was how Las Olas challenged preconceptions about spiced rum. "I think some people are worried that it's not going to be the character of the rum, it's going to be overly sweet, and this is about balance," he notes. Each cocktail demonstrates that balance - never allowing sweetness to overwhelm the rum's natural complexity.
